So I haven’t really posted about my eats recently so it’s defiantly time for a Meagan Eats Post!

Meagan eats: Vegan Chili!

I made up the recipe for this and it came out great!

  • 3 onions, diced
  • 4 cloves of garlic
  • 2 cups shredded carrots
  • 2 green bell peppers, diced
  • 1 red bell pepper, diced
  • 4 large zucchini, large dice
  • 1 large apple, diced
  • 24 oz can petite diced tomatoes
  • 1 pint veggie broth
  • 1 cup red lentils
  • ¼ cup steel cut oats
  • 2 tbsp chili powder
  • 1 tbsp Bell’s Seasoning
  • 1 tsp cumin
  • White pepper, black pepper, cayenne pepper
  • 1 tsp Dijon mustard
  • 2 tbsp vegan worshteshier sauce
  • 2 tbsp balsamic vinegar
  • 1 tsp blackstrap molasses
  • 2 tbsp corn starch, whisked with ¼ cup cold water or veggie broth

Work really hard over a cutting board for about an hour (or 17 minutes flat if you’re me! 😛 ), then with a squirt of smart balance spray sweat the onions, carrots, garlic, peppers, lentils, apple and oats. Add the tomatoes once everything is transparent and nice. Add the veggie broth, all the other crazy ingredients, and simmer for 20 minutes covered and 10-20 minutes uncovered. Serve with Feish and Weiser Guacamole starter and additional hot sauce!

Now that’s good eats!

Hello chocolate banana whip!

  • 1 cube (about 1.5 tbsp) frozen silken creations, chocolate
  • 1 banana, frozen
  • 1 tsp cocoa
  • Almond milk to get it to consistency

Top with:

  • Dark Chocolate almond granola
  • Non Perils
  • Peanut Butter Powder
  • And obviously a chocolate covered espresso bean!

Breakfast this morning was a delicious baked apple. Please try this!! Baked apple oat bran is fantastic!

Core an apple without taking the whole core out (leave a base). Fill with ~1 tbsp pecan butter. Add 1 tbsp (scant) of this stuff:

And a little molasses. Sprinkle with cinnamon and place in the center of a ceramic baking dish. Surround with 1/3 cup oat bran, cinnamon and a few cranberries. Pour 1 cup boiling water over the oats, avoiding the apple. Bake covered for 20 minutes at 400 degrees, then uncover and bake until the apple pops! (About 20 minutes) Viola Baked Apple Oats.

Seriously though, these were so fantastic. They caramelized and got really gooey. The burst apple sweetened the oats and infused them with flavor. Winner!!

Leftover vegan chili for lunch!!! (With spinach!)

A kiwi for munching!

Snack was cereal with craziness (protein powder, cocoa, strawberries, chocolate covered espresso beans…

And another little taste with a crumbled NOO cookie and cocoa nibs. I love how white Almond Milk is!!

Bread with Adirondack Jack and honey, I also had a very crisp Macon apple. YUMMY MUNCHY!

Spinach with balsamic drizzle, marinara, red bell peppers, mushrooms, capers and hummus.

A little bit of penne…

And after finishing 4000 words in essays… (Seriously!!) I had a pita with some smart balance butter, honey and a kiwi.
