Too many bananas!

This morning began with a slice of Dakota with Almond Butter and fig jam. IMG_1577

I went to the gym early (on a day off!!) for a 60 minute swim. ‘Twas amazing.

When I got home, I was starving! I spent some time crafting the most satisfying bowl of oatmeal… ummm.. ever?

Oats:

  • Oat bran
  • Egg white
  • French Vanilla Tea bag
  • splash of espresso
  • 1 tbsp cocoa powder
  • a few drops vanilla stevia
  • 1/2 cup apple sauce
  • 2 tbsp pumpkin
  • 3 dried figs, snipped

Toppings:

  • Pom Aryls
  • Another fig, snipped
  • Nut butter love!

This was so delicious!! After breakfast I started baking with my, oh, say 9 overripe bananas…

Lunch was Pumpkin Chick Pea Curry, and I think I liked it even better this time!

  • 1/2 cup chick peas
  • 1/2 cup pumpkin puree
  • 1 tsp curry powder of choice
  • 1 tsp sriracha sauce
  • handful of baby spinach
  • 1 tsp Fischer & Weiser guacamole starter (contains cilantro and onion, perfect with this dish!)
  • Hummus and pita wedges (actually this was 1/2 a tortilla, but we’re going to pretend!!)
    After lunch I sampled the banana breads and sipped on a homemade cappuccino while typing up the recipes and working on JFK!
