Bourbon Mashed Sweet Potatoes

This combination is just to die for. I love bourbon’s flavour, especially with the pure taste of maple syrup and sweet potatoes… (one of my favorite vegetables in the world!)

This was an Uncle Paul creation, as I was thinking of him the other night and remembered his mashed sweet potatoes. Uncle Paul is a bourbon guy too, and the combination sounded familiar. I researched some recipes and found most utilize tons of heavy cream and butter. My version is veganized and a little lighter, letting the natural sweetness come through.

  • 4 lb sweet potatoes, peeled and diced
  • 3 tbsp non-hydrogenated vegan margarine
  • 1/4 c. Bourbon (2 shots)
  • 1 tsp salt
  • 2 tbsp maple syrup
  • 1 tsp blackstrap molasses
  • 1/4 c. almond milk, more if needed

Roast the sweet potatoes in a 400 degree oven for 35-40 minutes, until completely tender. in a bowl, mash together the potatoes, margarine, bourbon and salt. Add the syrup, molasses and almond milk and continue to mash.

Serve, or refrigerate overnight and reheat in a 300 degree oven for 30 minutes. Stir in about another 1/4 cup almond milk if you serve the next day.
