Sherry Mushrooms and Shallots

I love gooey, thick, sweet onions when they’re almost melted and I love the flavor of rich, meaty portabella mushrooms. This recipe makes a delicious condiment, topping for pasta, pizza or burgers. The shallots act as “dressed up” onions, adding a different and more delicate flavor.

Though this recipe isn’t pretty, it’s certainly delicious!

Ingredients:

2 large portabella mushrooms

2 large shallots

2 cloves minced garlic

1/2-1 tbsp olive oil

1/2 cup sherry wine

1/2 cup vegetable stock

1 tbsp arrowroot powder (or starch)*

Salt and pepper, to taste

Heat the olive oil in a large skillet over high heat.  Add sliced mushrooms and shallots and cook until the mushrooms have taken on color and the shallots are a golden brown, about 7 minutes.

Add a pinch of salt (about 1/3 tsp) then reduce the heat and stir. Cook for 5 more minutes. Add garlic and cook for 2 minutes.

Whisk together cold sherry and arrowroot starch, and add to the pan stirring constantly. Cook over medium heat, and add vegetable stock as water evaporates. Add salt and pepper to taste, then cover and simmer over low heat until ready to serve.

*Click here for my feelings on starches. Corn starch is a suitable replacement, but may be more temperamental: Corn starch doesn’t like acidic environments or cooking for too long.

Cooking the mushrooms without salt at first gives them a great color without “steaming” them. I love this recipe and method, I smother everything in sautéed onions or shallots!

I went prom dress shopping with Steph today and I’m wondering why there is NOTHING both sexy and classy. I don’t want cutouts, I don’t want sequins and I don’t want to look like a Las Vegas showgirl. I also don’t want a dress that buttons up to my neck! Where oh where will I find a happy medium?

Love this dress… but it doesn’t come in my size. Le sigh!

    Oh girl, I love that dress, too! I remember being so sad in college that my prom dress shopping days were over. I also didn’t want the sparkles and crazy stuff. I am sure you will find something that fits your classy self. 🙂

    prom – sounds all movie like to me 🙂
    we just called it a graduation…it was no real big deal….
    i wore a chocolate colored dress…very cheap and very basic compared to everyone else…but i enjoyed it….it was so so comfortable and simple…all i wanted 🙂
    (i try to blend in with the crowd i think 🙂 )
    cannot wait to see what u buy….have a color picked out?

    Aw, that’s such a beautiful dress! I hate when you like something that’s unavailable 😦 I wore a red dress from a store called Cache to prom and my boyfriend matched with a red tie. I loved it! I’m sure you’ll find one you like soon!

    I love that dress! I wore Betsey Johnson head to toe my prom, it was so fun, young and most importantly different!

    I heard about you through HEAB, she loves you! 😉 I love your blog. I wish my dorm had a kitchen so I could try these wonderful things you make!

    That is a very pretty dress; fortunately you are starting the search early, so maybe you can find something similar!

    I wore a very simple classy dress to prom…I also didn’t want the poof or sparkles…

    I LOVE sweet sauteed onions. 😀 My mom and I make tons and gobble them up quite quickly (my dad helps a lot with that).
    Also, that is a cute dress 🙂 I just wore a simple black dress last year, a little shorter than knee length (about knee length) and brought a grey wrap shawl thing… super blurry but this is the only pic i could find:

    I know what you mean! I went dress shopping last weekend and everyone I found was either really trashy or just too plain. I luckily found my dream dress that is both classy and bold just what I was looking for. I cant wait till prom this year 🙂

    I went to prom in 1999 and 2000. Hahahaha. Like you, I wanted classy. However, bear in mind that 1999’s theme was “Cinderella,” so we all wore ball gowns. Mine looked like Belle’s from Beauty and the Beast. In 2000, I wore a sleeker raspberry colored gown that had a VERY tiny slit (read: not revealing), a low back and a somewhat higher neck, and some subtle beading.

    Love your about me! That’s kind of how I feel, but I’m a college kid in a small town… Can’t wait to graduate! That dress is gorgeous, too bad it is not in your size. I bought all my prom dresses from Cache. I think their website is cache.com.

    I went to 3 proms. The first one was with a blue sparkly dress that was a little too big, I hate those pictures. The 2nd was a black halter that was gorgeous. And the 3rd time was a charm, it was a deep plum color with an amazing cut… I would wear it again! (not sure where though…)

    Oh my gosh. I think my prom dresses were more like pageant dresses. I don’t think I wore anything poofy (a lot of people did!), but I did have a bit too many sequins.

    I love sauted mushrooms and onions. The texture and flavor is always amazing.

    I had the same trouble in high school with not wanting a dress that looked like it belonged on an 8 year-old beauty queen! I remember finding one that fit my specs at a wedding shop and it was supposed to be a bridesmaids dress! Loved it.
