Caramel Cherry Vodka Sauce
- 6 tbsp sugar
- 10 oz pitted bing cherries
- 4 oz vodka
- 1/2 tsp salt
Over high heat, cook the sugar over high heat until burnt and caramelized. Turn down the heat and add the cherries, fold in with a wooden spoon.
Stir in the vodka and salt, cook until thick and syrup-y (coats the back of a spoon.)
Serve over cheesecake, ice-cream, or chocolate mousse.
