Fill Me Up: Chewy Peanut Butter Cup!
22 seconds after I saw Jessica’s post about chewy chocolate cookies, I ran down to the kitchen and got to work.
I adore “How Sweet It Is”… her posts are witty, beautiful, and always look delicious.
I had an urge to fill the gooey cookies that appeared on How Sweet with something…
Anything…
But how?
Chewy Chocolate Peanut Butter Cup Cookies
adapted from “How Sweet It Is”, adapted from bakespace
- 12 oz powdered sugar*
- 2 oz organic cocoa
- 1/4 teaspoon salt
- 3 egg whites
- 1 teaspoon vanilla
- 1/4 c. chocolate chips
- 3 tbsp Saratoga Peanut Butter (either Plain Jane or Chillin’ Chocolate)
Preheat oven to 350.
Stir dry ingredients together in a stand mixer. Turn mixer on low and add egg whites one at a time – the batter will be very dry until the last egg white. Add vanilla and turn mixer on high for 2 minutes.
Spoon batter onto a parchment- lined cookie sheet. They will be very sticky. With moistened fingers, “pull back” the center of each cookie and insert about 5 chocolate chips and a scant tsp of peanut butter. Close the cookie. (procedure shown below)
Bake for 15 minutes, then let cool before removing from parchment paper.
Makes 14 cookies.
*Alternatively, use 6 oz powdered sugar and 6 oz NuNaturals Baking Blend. I was on a sugar high just looking at the recipe and I wanted to try out this baking blend. They came out really good!
Drop the blobs of batter on parchment paper.
Wet your fingers!
“Pull back” the dough.
Add chocolate chips and a spoonful of peanut butter.
Fold them back up into their original blob- form.
All stuffed and ready to go!
15 minutes later…
Peanut butter, we meet again.
Ooozing chocolate.
These were SO SO GOOD! Make them today! (And with 1/2 stevia, they’re only 16 g of sugar as opposed to 32… only half the sugar high haha)

In unrelated news,
Banana mudslide oats have taken over my life. I used my fluffy oat method, and stirred in 1/2 a banana (melted, of course).
1/2 the oats went into the cup, and then I added 1 T cocoa powder to the other half. It was topped off with Amazing Grass Chocolate/Almond milk slurry, the other 1/2 banana, Udi’s granola, instant coffee and Saratoga Peanut Butter’s new experimental flavor.
Heaven in a cup, my friends. Haha get it, mudslide oats in a Kahlua cup? I know. I know. 😀
Katie, I think this was a fusion of melted banana brownie batter, mudslide oatmeal, and heaven. Haha I should have crumbled a fudge baby on top to get in all the chocolate-covered food groups!

Yummmmmmmmmmmyyyyy. I’m not a huge sweet person (give me hummus anyday) BUT those cookies are making me salivate. If I had the ingredients (and it wasn’t freezing cold) I’d make these cookies ASAP. Maybe I’ll make them (and eat them…lol) tomorrow 🙂
