La Pasta Affilata e Dolce- This pasta has sharp flavors from the onion and vinegar, and sweet flavors from the goldenized garlic, fresh tomatoes, and nutty almonds. It’s a Mediterranean recipe; a cross between Italian and Spanish. Affilata refers to the type of knife used to cut the onions, duh! 😉 (Vegan)

Garden Pasta with Spinach and Cece al Forno- Baked ziti is not a dish I remember fondly, but these marinara sauce-baked chick peas reminded me of the times baked ziti tasted amazing. With a seedy, grainy crust and a roasted red pepper sauce, the sweet scallops have the perfect platform to shine. Cooked quickly, the scallops have a tender texture.
